▫1 and a half cups cake flour
▫1 and a half cups brown bread flour
▫ghee (Clarified butter)
▫Half teaspoon salt
▫2 cups boiling water
▫Mix brown and cake flour.
▫Add salt and mix through.
▫Add 3 tablespoon melted ghee (Clarified butter) and mix in to resemble bread crumbs.
▫Add 1-2 tablespoon oil and mix in again.
▫Add 1 cup boiling water and mix with spoon.
▫Add second cup gradually until you reach desired consistency (you may not need the entire 2nd cup).
▫When dough cools enough, mix with hands and knead into a soft dough.
▫Split into portions of approximately 60-65g each (should get 12-15).
▫Roll each piece out into a small circle, place some ghee (Clarified butter) and flour on it, and then close up again.
▫Roll each piece out to desired size and thickness.
▫Fry on roti pan with ghee (Clarified butter) on both sides.
▫Store with a sheet of foil at the bottom and the top of the stack to maintain softness.
