INGREDIENTS
1 and a half cups cake flour1 and a half cups brown bread flourghee (Clarified butter)Oil½ teaspoon salt 2 cups boiling water
METHOD
Mix brown and cake flour.Add salt and mix through.Add 3 tablespoon melted ghee (Clarified butter) and mix in to resemble bread crumbs.Add 1-2 tablespoon oil and mix in again.Add 1 cup boiling water and mix with spoon.Add second cup gradually until you reach desired consistency (you may not need the entire 2nd cup).When dough cools enough, mix with hands and knead into a soft dough.Split into portions of approximately 60-65g each (should get 12-15).Roll each piece out into a small circle, place some ghee (Clarified butter) and flour on it, and then close up again. Roll each piece out to desired size and thickness.Fry on roti pan with ghee (Clarified butter) on both sides.Store with a sheet of foil at the bottom and the top of the stack to maintain softness.
