INGREDIENTS
125g butter
3 cups flour
4 teaspoon baking powder
Little more than ½ cup milk
1 egg beaten
1 teaspoon vanilla
Rub butter into dry ingredients..form dough with milk and beaten egg..
FILLING :
125g butter
¾ cup sugar
Cream well then add
¾ cup coconut
Food colour of choice
METHOD
Divide dough into 2..roll out into a rectangle on a floured surface..spread with filling..roll up tight like a swissroll
Cut slices with a sharp knife and place on baking tray
Bake in a preheated oven on 180 for ± 10 minutes
