use Jam Or Dates 125 g soft butter or margarineCream wellAdd125 ml sugar. Cream againAdd1 beaten egg 1 teaspoon vanilla essence Add 2 teaspoon Baking powder+- 1 ½ - 2 cups sifted Flour or as requiredMake a soft doughDivide dough into 2 lots(Keep 1 lot of dough small because you just only need to grate on top)In a greased oven tray Flatten the larger dough flattenBake at 180* for 10 minutesRemove from ovenSpread smooth apricot jam or any Jam OR VARIATION1 cup chopped dates½ cup sugar1 cup boiling waterBoil above when dates are soft and mushy cool and spread over the dough Then grate the rest of the small lot of dough on topSprinkle with 100's & 1000'sPut back in oven and bake for 10 more minutes till light in colourCut in squares when cool.Keep in airtight container
