Beat eggs, sugar, melted butter, vanilla and buttermilk together. Add the sifted dry ingredients to the egg mixture to form a soft dough. Roll out and cut with a doughnut cutter. Fry in medium hot oil till golden.
Syrup Boil until slightly sticky for about 15 minutes Dip doughnuts in warm syrup then in coconut.
