INGREDIENTS
1 block Woolworths lemon & mint Halloumi cheese½ cup flour1 tablespoon maizena (corn flour)½ teaspoon baking powderPinch salt1 egg½ cup chilled soda waterIce
Garnish-sweet chilli saucemayonnaise lemon wedges Mint/ corianderChopped spring onionssliced baby plum tomatoes
METHOD
1. Cut cheese in half widthwise.2. Then cut cheese into 5-6 strips (will end up with 10-12 pcs).3. Place ice into a flat dish.4. Place flour, salt, baking powder into a mixing dish. Mix with fork.5. Beat egg and add to flour. Do not mix in.6. Place mixing dish onto ice.7. Add in soda water, now mix with a fork until just mixed.8. Do not mix the batter until smooth. There will be lumps. That is how tempura batter should be.9. Dip cheese into batter and place in preheated deep fryer at 200degC and cook until lightly golden.10. When done serve with a drizzle of sweet chilli sauce, drizzle of mayo, freshly squeezed lemon, mint/coriander, chopped spring onions and sliced baby plum tomatoes.#mamataughtmewellrecipes

Note: Eat halloumi whilst hot. The batter will be light and crispy if done right.
