INGREDIENTS
Herb and Almond crusted rack of lamb

500g rack of lamb
1 tablespoon olive oil
1 teaspoon crushed garlic
Salt and black pepper to taste
Herb crust :
50g mixed almonds and pecans (unsalted)
1 tablespoon bread crumbs / crushed corn flakes
1 sprig basil leaves
5-6 mint leaves
1 sprig fresh rosemary
1 tablespoon olive oil.
METHOD
Pre heat oven to 190°c
Mix garlic and oil.
Season rack of lamb with salt pepper and garlic oil.
Place all ingredients for crust in a food processor. Process fine.
Coat rack of lamb with the crust mixture.
Place the coated rack of lamb in a baking pan. Bake 30-40 minutes or until meat reaches doneness medium - well.
Leave to stand 10 minutes before slices.
Serve with roasted vegetables or as desired.
INFO & TIPS
(NB : using the airfryer. Preheat to 100°c place coated rack of lamb into the airfryer basket. Set timer for 30 minutes. After 25 minutes increase temperature to 200°c for 5. Remove and leave to stand 10 minutes. Tried and tested)
