1 kg chicken mince
1 tablespoon garlic
1 teaspoon ginger
1 teaspoon ground green chili
2 tablespoon ghee (Clarified butter)
Handful of bread crumbs
2 tablespoon Robertson chicken spice
1 tablespoon gorimas seekh kebab spice
1 teaspoon aromat
1⁄2 teaspoon black pepper
Almost half a bunch dhania (coriander) chopped fine
Handful chopped spring onion
2 onions grated or pop in food processor (use a cloth to squeeze out all the water )
Handful crushed fried onions (optional ) I used this time .
salt ( taste first coz chicken spice is salty )
100g rama marg
1 freshly squeezed lemon
1⁄4 cup fresh cream
dukkah flat bread :
flat bread :
3 1⁄2 cups flour
1⁄4 cup sugar
1 teaspoon salt
1 teaspoon yeast
1 tablespoon olive oil
1 1⁄2 cups luke warm water
olive oil / butter
1 tablespoon dukkah
Add the ingredients mix it together
Add the mince
mix with a light hand until all mixed up
to taste for salt yo can add a small amount to microwave for 10 to 20 seconds it wil cook and u can taste .
make nice size balls
grease a pan
add the amount you want t prepare .
cook on meduim with 1⁄4 up water
add butter just before almost done
1⁄4 to 1⁄2 lemon squeezed
cook until brown.
Place in serving dish pour some lemon butter sauce over and garnish with dhania (coriander)
Lemon butter :
In a small pot add all ingredients and bring it to boil
add salt if necessary.
dukkah bread :
Add the dry ingredients
add the oil and water in the middle , start mixing .
knead the dough .
place in a greased bowl , cover and allow to rise about 1 hour .
divide dough into 2 or 1
u will get 2 meduim size or 1 large flat bread .
flour an oven tray place on the tray .
spread some of the dukkah and olive on top
bake for 15 to 20 minutes
cut with a pizza cutter
spread some more dukkah oil
serve hot .
