INGREDIENTS
4 eggs- separated1 cup sugar1 cup flour½ cup warm water2 tablespoon cocoa (make a paste with additional +- ½ cup warm water)½ cup oil1 tablespoon baking powder1 tablespoon vanilla
Whipped cream:2 cups COLD whipping cream 4 tablespoon Petinna stabiliser (optional)2-4 tablespoon icing sugar (Adjust to taste)
METHOD
Start by separating your eggs.Place the whites in one bowl and the yolk in another.Whip up your egg whites till stiff peaks with a pinch of bicarb. set to the side.To the egg yolks, add in flour, sugar, warm water, cocoa paste, vanilla and oil.Beat this with an electric mixer for 10 minutes.It will become lighter in color. Lastly mix in the baking powder.Then fold in the eggs whites, gently.Prepare a 12inch x 17 inch baking tray. Pour this into a greased and lined with baking paper sheet tray. Bake at 180 degrees °C for 13-15 minutes.Check with a cake tester or skewer to see if it is baked through.Do not overtake it.Once it's cooled take it out and let it cool down completely. Then run a knife along the edges and remove it onto another board .Cut your cake into 3. Then pipe on your whipped cream over 1 layer, and place another cake layer on top and pipe cream again.Lastly put the last cake layer ontop. If you wish to pipe ganache on top you may do so.Slice into rectangular/Square shapes and place onto a cupcake paper. Store in the fridge.
For the whipped cream, add in the stabiliser and COLD whipping cream to a bowl and whip with your electric mixer till nice and stiff. Place into a piping bag.Enjoy!
