1 cup castor sugar
1 teaspoon baking powder
1⁄4 teaspoon bicarbonate of soda
1 teaspoon vanilla essence
1 cup coconut
1⁄4 cup oil
1 teaspoon Elachi (cardomom) powder
1⁄2 teaspoon ginger powder
1 tablespoon mixed spice powder
2 1⁄2 tablespoon cinnamon
1 teaspoon naartjie peel (optional)
+- 3 cups flour
Beat butter and sugar together till light and creamy. Add in rest of the ingredients. Lastly add in flour. Add more flour if required just enough to make a soft dough.
Roll about 1cm thick and cut with any shape as desired. Place a pecan nut on top.
Bake at 180 till golden (for about 13-15min)
