INGREDIENTS
2 eggs
2 cups self raising flour
1 ½ cup sugar
½ teaspoon salt
1 teaspoon vanilla essence
2 tspns bicarbonate of soda
410g can of fruit cocktail
Mix everything together but add the fruit cocktail last ..
Mix ( do not over do wth mixing it will pulverize the fruit)
Pour in oven proof Pyrex dish
Bake 180• C
30 minutes
In meantime make the sauce
¾ cup sugar
¾ cup sea coconut
½ cup evaporated milk
4 tspns butter
Boil together in saucepan for 5 minutes

Poke with a large fork or cake tester ..
pour the hot save over pudding and serve
