1 kg chicken fillets cubed
100g unsalted butter
1 small onion finely chopped
2 cloves of crushed garlic 3 teaspoon
5ml crushed ginger
2ml arad (Turmeric)
5ml fine cummin
1ml ground cinnamon
5 ml dried origanum
10ml grated lemon zest
50 ml fresh mint leaves chopped
25 to 50 ml lemon juice
1 lemon halved and sliced
saute onions till soft with garlic.add spices and half
mint.braise for few minutues. Add to chicken and
overnight. Cook till water burns out.add other half
Place on skewers alternating with lemon slices.
baste with leftover masala.
