Microwave Coffee Mug Cake

INGREDIENTS

4 tablespoon self-raising flour4 tablespoon caster sugar2 tablespoon coffee (I used ricoffy)1 medium egg3 tablespoon milk3 tablespoon oila few drops of vanilla essence

METHOD

To the mug add the self-raising flour, caster sugar and coffee to the largest mug you have (to stop it overflowing) and mix.Add the egg and mix in as much as you can. Add milk, oil and vanilla essence and mix until smooth.Center your mug in the middle of the microwave oven and cook on High for 1½ -2 minutes, or until it has stopped rising and is firm to the touch.
