Vine tomatoesBaby marrowsHake MedallionsLemon slicesRosemary/ ThymeSalt & pepper½ teaspoon garlic pasteOlive oil
Method:1. Gently squeeze out excess water from fish. 2. Mix garlic, salt, pepper and oil into a wet paste. Marinate fish.3. Fry fish on high, giving color to each side but not cooking through. 4. Squeeze over a little lemon juice. Set aside.5. Season sliced baby marrow in salt & pepper & drizzle of olive oil. Toss & coat.6. Place down baby marrow in foil, then place ontop fish.7. Layer over lemon slices & rosemary/ thyme.8. Arrange vine tomatoes around.9. Wrap into foil parcel.10. Bake in preheated oven at 200degC until fish is flaky but tender.
