INGREDIENTS
1kg mawa
½ cup klim
1 teaspoon Elachi (cardomom) ground
700 gram sugar
375 m water
METHOD
1. Mix mawa, Elachi (cardomom) and klim together and
ensure the mixture is very fine
2. Bring water and sugar to boil on high heat
then reduce heat to low-medium
3. Simmer for 15-20 minutes mixing occasionally
until syrup reaches soft ball phase (holds into a
soft ball between fingers and forms a thread when
fingers pulled apart)
4. Add mawa mixture to syrup when ready and mix
well with wooden spoon till all lumps are broken.
5. Allow to cool
6. Optional: Add 2 tblsoons powdered almonds
and mix burfee well in kenwood or by hand
7. pour into mould and allow to set
