My styleCan Use Chicken Reduce the spices a bit 1 kg cut up mutton (I used lamb)(Can boil the meat for a while to reduce the cooking time if using mutton ) keep.the water aside for use later2 chopped onions2 chopped tomatoesSpices to toast1 teaspoon whole Jeeru (Cumin)1 teaspoon whole dhania (coriander) seedsFew whole black peppers4 green Elachi (cardomom)2 clovesLittle somph optional2 bayleavesToast the above and grind in coffee grinder In pot add little ghee (Clarified butter) and oil mixedAdd onionsBraise till light brownAdd your ground spicesAdd 2 teaspoon Kashmiri chilli powder1full.teaspoon.tumeric 1 full teaspoon paprika 1 or 2 chopped green or red fresh chilliBraise Add 1 heaped teaspoon ginger garlic paste1 teaspoon garlic1 tablespoon Magic masala or AminasWonder spice 1 teaspoon red masalaBraise add your chopped tomatoBraise 5minutesAdd mutton piecesBraise till spices are well infused with the tomatoesNow add some water to.soften meatsCook till gravy is reducedAdd a squirt of lemon juice if preferredAdjust your salt and chilli Garnish with slivered ginger and chopped green dhania (coriander)Enjoy with naan rotis or bread rolls
