125g butter 1 cup castor sugar1 teaspoon vanilla essence 3 eggs 2 cups flour3 teaspoon baking powder ½ cup milk Beat butter and sugar till light and creamy. Add in vanilla essence. Add in eggs one at time beating well after each edition. Alternate flour and milk and add in baking powder. I doubled the batter for this cake.Grease 2 sandwich pans and pour batter evenly and bake at 180 for about 25-30 (till nice and golden). When cool spread apricot jam on the bottom layer and place second layer on top. Dust icing sugar over.
