- ¼ cup oil- ½ to 1 small onion (sliced)- 1 bay leaf- ½ tablespoon of garam masala (peppercorn, cumin seeds, cinnamon stick, star anise)- ½ cup peas- ½ tablespoon salt- 1 ½ cup water- 1 cup basmati rice
- Heat oil and braise onion till soft (do not brown)- Add the bay leaves and spices and braise - Add the peas, the salt and a little water. Mix well- Add the water (check the salt if you want more) then the rice and mix- Reduce the heat to medium, cover the pot and let cook +-5mn. - With the spoon make some holes in the rice for the steam to release (do not mix it!) - Close the lid and leave it to cook till done.
