INGREDIENTS
2 Cups Carrots, grated ¾ Cup Sugar¼ Cup Coconut2 Eggs¾ Cup Oil¼ Cup milk½ teaspoon Vanilla Essence1 Cup Cake Flour1&½ teaspoon baking powderHandful of Raisins½ teaspoon CinnamonIcing Sugar - Sprinkling
METHOD
Beat the Oil, Eggs, Sugar in bowl, until fluffy. Add the dry ingredients.Then the wet ingredients. Mix in the Carrots & Fine Cinnamon. Spoon into Muffins cups bake at 180 degrees.For about 20/25 minutes. Cool down. Sprinkle with some Icing SugarMakes 15-18
