250g butter1 and ½ cup castor sugar4 eggsPinch of salt3 cups flour4 teaspoon baking powder 1 cup milk2 teaspoon vanilla essence
Preheat oven to 170 degrees. Cream butter and sugar until light and fluffy. Add eggs 1 at a time and beat well. Sift flour, baking powder and salt. Add to butter mixture alternatively with the milk and vanilla essence. Beat for 1 minute. Pour into a greased oven tray. Tap tray to remove any air bubbles. Bake for 25 to 30 minutes. Remove from oven and allow to cool completely. Cut in squares.
Syrup for lamingtons
1 and ½ cups water3 cups icing sugar3 tablespoon cocoa powder 3 tablespoon butter
Mix everything together. Boil for 2 minutes. Cool slightly then dip cakes in syrup and coconutOnce tasted never wasted 😋Share as received ⭐⭐⭐
