1 cup Toor dal (Tuwar dal, Oily dal)1 cup SugarIt's usually equal quantity More sugar depending on taste.
Soak dal overnight.Boil dal with1 cup water until dal soft (not mushy)
Once boiled..push thru sieve. Add sugar and put back on medium heat stirring occasionally as it will stick.Once it starts to get thick add in 1/2 teaspoon cardamon powder, nutmeg powder and pinch of Zafran (saffron). Lower heat add in1tbs of ghee (Clarified butter). Mix. Remove from heat once it's very thick and dry.
DoughPlain flour as needed ( I used 2 cups ) Add enough melted ghee (Clarified butter) in flour and rub with fingertips like breadcrumbs.(Approx 2tbs)Make dough with lukewarm milk/water.Rest dough for 20 minutes.Keep covered with damp cloth..Make equal size ball of dough and dal.
Roll out small puri, flatten the ball slightly put dal in centre and fold up the dough around.Roll Roti. Cook on preheated tawa (griddle) pan on medium heat.Cook on both sides.Add ghee (Clarified butter) on each side when freckled Cook a little and remove..Enjoy
