1. Slice the chicken fillets in half lengthwise.2. In a pan drizzle a little oil and heat.3. Place fillets in oil, then sprinkle on spices. Cook halfway, then turn over.4. Pour sauce over and allow to cook till finished.5. Remove from heat and leave aside while assembling sandwiches.6. Slice croissants open, place on frilly lettuce, sliced avo, sliced cheese, sliced tomato, then place on chicken fillet, a thin spread of mayo and spoon over sauce from pan. 7. If serving in a lunchbox, clingwrap to keep croissant nice and fresh.
