INGREDIENTS
Cake
125g butter
¾ cup castor sugar
3 eggs
1 cup + 4 tablespoon flour
1 teaspoon vanilla essence
1 ¼ teaspoon baking powder
Syrup
1 cup boiling water
60g butter
2 tablespoon cocoa
2 cups icing sugar
1 teaspoon vanilla
METHOD
Cake method:
Cream the butter and sugar well. Add in the eggs one at a
time, beating well after each addition. Add in the dry
ingredients. Bake in a 25cm square pan for about 20 minutes.
Syrup method:
Boil all the syrup ingredients together till it thickens slightly.
Cut the cake into squares. Dip in syrup and then coconut.
