INGREDIENTS
½ kg white fish fillets - wash and pat dry with kitchen tissue and keep aside.
Make a marinade with:Salt to taste ¾ teaspoon dhana jeeru (cumin) powder½ teaspoon chilli powder 1 ½ tablespoon Amina’s Wonder spice fish and prawn masala 3 tblspns chopped fresh coriander 3 teaspoon lemon juice (bottle - less if from a fresh lemon)Khuri limbre (Curry leaves)½ teaspoon paprika powder Few whole red chillies
Other ingredients:Oil for frying
METHOD
1.) Mix all of the marinade ingredients together - dip fish pieces into the marinade and leave to marinate for about an hour.2.) Heat oil in a non stick frying pan (3tblspns) - add the marinated fish to the hot oil and fry both sides on Med/high heat.3.) Remove from oil and transfer to an ovenproof dish - pour leftover masala over the fish (without the oil) then grill in the oven till masala is dry.4.) Serve with Khuri khitchri and Aaloo (potato) fry (recipes links below)
