INGREDIENTS
2 Avocado’s cubedHalf a tomatoe seeds removed and cubesHalf a red onion cubed1 jalapeño deseeded and sliced.Handfull fresh coriander leaves chopped2 tablespoons lemon juiceSalt to tasteGrinded black pepper to taste
METHOD
Cube all the ingredients into small cubes.lf the cubes are too big you will struggle to fill the paani puri shells.Toss lightly together and set aside
Fry golgappa’s in hot oil and set asideThese can be purchased from any Indian Spice shop.
Make the pani (the sauce to pour into your puris)A handfull fresh mint leavesA handfull fresh coriander1 green chillie(omit if you don’t want the heat)½ teaspoon salt½ teaspoon cumin (jeera)2 cups of water.Put all ingredients into a liquidiser and blend untill it becomes fine.Add more water if its too thick.It needs to have a watery consistency.
To assemble your Mexican paani puri.Make a hole in the top of the puri with a spoon.Be gentle !!Fill with salsa mixture and top with coriander leaves,slices of jalapeño and serve.Do this before you serve or else the puri gets soft.The paani is served separately so everyone can pour how much they want into the puri.Enjoy a explosive taste sensation in your mouth♥️

Tip
Fry your golgappa and poke your holes and leave aside .Make your salsa and leave in the fridge.Make paani and pour into your shot glasses and leave aside on a tray.When you ready to serve just assemble
