INGREDIENTS
π€250g shrimps(1 packet)π€2 tablespoons olive π€4 tablespoons sesame oilπ€1 litre of boiling waterπ€2 tablspoons light soya sauceπ€1-2 teaspoon lemon juiceπ€1 teaspoon fish sauceπ€3-4 cloves fresh garlicπ€Fresh ginger chopped thinlyπ€1 teaspoon saltπ€One small red onion finely choppedπ€1 carrot cut into thin sticksπ€2 tablespoons fu chi chilli garlic sauceπ€5-6 stalks of whole lemon grass stalks(do not cuts, so it's easy to remove before serving)π€10 kaffir lime leaves(got from a Chinese supermarket)π€3 red Thai chillies (or less depending on how much heat you like) π€2 green Thai chillies(these are not strong at all) π€1 cup of chopped mushroomsπ€1 cup snap peasπ€2 stalks leaks choppedπ€2 stalks celery chopped π€2-3 stalks spring onions chopped
METHOD
πAdd olive oil and sesami oil to a wok or potπOnce hot add onion, carrots and green & red chillies. Stir fry for 2 mintuesπThen add all greens and shrimp. stir fry for another few minutesπThen add in fine ginger, garlic and chilli garlic paste, soya sauce and fish sauce. braise till aroma comes out. πThen add in boiling water π30 minutes before serving add mushrooms and boilπ Remove lemon grass stalks before serving

Squeeze abit of lemon and soya sauce before eating π€€β€οΈ
Serve with Jasmine rice or rice noodles(NOT SPAGHETTI)
