250g butter softened¾ cup castor sugar2 teaspoon vanilla essence1 egg + 1 yolk2 teaspoon baking powder2 ½ cups flour¼ cup cornflour 250g apricot jamHandful sliced almonds
Cream butter sugar and vanilla. Add the egg and mix well. Then add sifted flours and mix to a soft dough. Place ⅓ of the dough in the freezer. Press down the ⅔ of dough on a small sheet pan, spread jam evenly over dough lastly grate the ⅓ dough over the jam sprinkle almonds over. Bake on 180 °C for 25 minutes or until golden on the topRemove from oven, slice whilst still warm dust with icing sugar.
