Vegetables:1 gem squash (cleaned and cut in crescents)3 medium sweet potatoes (sliced in 1inch circles with the skin on)1 large courgette (sliced in 1inch circles with the skin on)1 large parboiled corn on the cob (cut in 1 1/2inch circles) Marinade Paste:½ teaspoon salt (to taste)1 ½ teaspoon brown malt vinegar 3 tablespoons garlic and herb sauce or garlic mayonnaise 2 tablespoons spicy mayonnaise ½ teaspoon chilli powder¾ teaspoon black pepper1 teaspoon garlic powder½ teaspoon jeeru (cumin) powder½ a medium or 1 small onion (crushed and chopped)
1.) Mix all the marinade paste ingredients together, add the chopped vegetables to the paste and marinate for 10mins.2.) Transfer to a non-stick pot - top with a few blobs of ghee (Clarified butter) and cook on medium heat for 30-40 minutes or until vegetables are cooked to your preference.
