INGREDIENTS
Butter/Iceburg Lettuce2 Carrots gratedCherry tomatoes or 1 Tomatoe deseeded and cubed½ cup Robot peppers cubedCucumber cut in slices (can cut in ¼, cut the seeds out and slice - this prevents a soggy salad)1 Ripe mangoe cubed6 Dates pitted & choppedHandful fresh blueberriesCubed pineapple (optional)1 Small red onion slicedFeta cheese cubedSalt & ground black pepper Mixed herbsChopped fresh chives (optional)Chopped fresh parsley (optional)
Croutons:2 Slices white bread cut in cubes (1cm)Oil to drizzle on (2 tablespoon)3 tablespoon sweet chillie sauceSalt & ground black pepper to taste1 teaspoon mixed herbs
1000 Island Salad Dressing:2 tablespoon Mayonnaise 1 tablespoon Tomatoe Sauce1 tablespoon Sweet Chillie SauceSalt & ground black pepper to taste 3 tablespoon milk or enough to slightly thin out sauce
METHOD
Salad:- Layer salad, start with lettuce broken up- Add on grated carrots and sliced red onion- Add cubed tomatoes and peppers- Sprinkle little salt and pepper to taste and continue layering- Add cubed mangoe, dates, pineapple, cubed feta & blueberries- Add little more salt & ground black pepper - Sprinkle on some mixed herbs and/or chives and parsley- When serving add croutons on and some salad dressing- Enjoy :)
Croutons:- Cut the bread into cubes- On a baking tray put the cubed bread, drizzle on the oil, salt, ground black pepper, sweet chilled sauce and mixed herbs- Toss and bake in oven 15 minutes or until golden brown and crispy (as stands to cool will become more crispy)- Keep in airtight container - Can last a week in the fridge- Eat with salads, or as a snack on its own or with cheeses blocks
1000 Island Salad Dressing:- Mix all the sauce ingredients together and keep in a glass bottle in refrigerator - Serve on salad or with grilled fish or even add to burgers etc.
