INGREDIENTS
300g semolina
150g white sugar
1 teaspoon vanilla essence
3 tablespoon desicated coconut
150g softened butter
150g thick plain yoghurt
1-2 teaspoon baking powder(optional)
syrup- 200ml water, 100g white sugar, 1 teaspoon lemon
juice
almonds for topping
METHOD
preheat oven to 180
lightly grease a baking dish.
in a medium bowl mix together all cake
ingredients, except the almonds
pour mixture into baking dish and flatten with a
spoon. take a knife and make diagonal lines from
left to right and complete to make diamond shapes.
place an almond in the center of each diamond.
bake for 25-30 minutes or until light brown.
while cake is being baked make the syrup
in a small sauce pan over medium heat stir
together the water sugar an lemon juice. bring it
to a boil and boil gently for 5 - 10 minutes until
syrup starts to thicken, set aside. once cake is
baked remove from oven pour syrup over cake until
no more can be absorbed. serve warm
