INGREDIENTS
2 cups plain flour¾ cup buttermilk ¼ cup cup fresh cream , thickened ½ cup frozen butter cubes4 Tablespoon sugar3 teaspoon baking powder½ teaspoon salt 1 egg beaten
METHOD
Preheat oven to 220°C.
In a bowl, sift all dry ingredients.
Cut butter into cubes and place in freezer until ready to use . Next add these to the dry ingredient rub into flour with finger tip resembling Breadcrumbs, until the butter is equally distributed, it's important.
Keep buttermilk and fresh cream chilled.. Pour into the dry flour mixture, using a spatula try to bring the mixture dough together into a ball.
Work on a marble top, alternatively use the board, gently pat out the dough, lightly then roll out to just over 2 cm thick,you can use a 5 cm fluted cutter cut out as many scones as possible then gather up the trimming, re-roll the dough and cut out the remainder. Brush with lightly beaten eggs. Place on a greased baking tray and bake for 20-25 minutes or until light brown and slight cracks show and well risen. .
Serve these warm. Remember cold in the making and hot in the baking, for excellent results...
