INGREDIENTS
1.5 kg fresh Loofah aka Thorooi25g dried shrimp1 teaspoon mustard seeds2 stick cinnamon 1 onion sliced1 teaspoon crushed garlic3 tablespoon oil2 - 3 dried chillies broken into piecesCurry leaves 2 tablespoon Aminas Seafood Marinade/MasalaSalt to tasteQuarter teaspoon turmeric powderHalf teaspoon chillie powder
METHOD
Peel Loofah, rinse, dry, and cut down the middle, then slice into 1cm chunks. Keep aside.
Soak dried shrimps in some boiling water. Let cool. Strain, clean hard parts from the shrimp and keep aside.
In pot, add oil with mustard seeds, once it starts to splutter, add onions, garlic and the red chillie pieces. Braise till onion turns light brown.
Add dried shrimps and curry leaves and let fry for few minutes.
Add the fish masala, salt and spices. Braise for 5minutes. Thereafter add the vegetable. Stir carefully until all veggies coated well. Cover and cook for until veggies are soft. Remove lid and let curry simmer until water dries. Stir in between gently so as not to mash up the veggies.
Serve with basmati rice or roti.
INFO & TIPS
Fresh Prawns/Shrimp can be used also.
