Jummah lunch inspo
Boil 2½ cups rice ½ way. Drain rinse & set aside. Fry 4 potatoes ½Ed. Set aside
Braise 2 sliced onions in ghee (Clarified butter) & oil. Add in whole spices:Taj Elachi (cardomom) cloves peppercorns slit chillies bay leaves star anaise whole jeeru (cumin) Add in:1kg washed & drained mince. I use chicken mince 2 teaspoon @purespice_sa ginger garlic 1 teaspoon @purespice_sa green chillies & garlic 1 teaspoon @sujees_gourmet_foodgreen masala 1 teaspoon salt2 teaspoon chilli powder 1 teaspoon arad (Turmeric) 1 teaspoon dhana jeeroo Break up mince as it cooks. Add in 1 cup sour milk Few drops saffron essence 2 cups liquidised tomatoes ¼ cup tomato puree 1 cup peas1 cup chopped green pepper Cook 10 minutes.
Lay fried potatoes over mince.Sprinkle lots of dhania (coriander) Spread over rice.Dot with butter Sprinkle fried onions and dhania (coriander) Seal with foil.Bake for 40 minutes.Serve with dahi & kachumbar
