Adapted from various recipes.
INGREDIENTS
250g butter, softened 1 cup brown sugar¾ cup white sugar
2 eggs
3 cups flour¼ cup ground oats (just pulse oats in processor/coffee grinder)1 heaped teaspoon baking powder1 teaspoon baking soda¼ teaspoon salt150g good quality chocolate, chopped roughly (Lindt is delicious!) 2 generous handfuls pecans, roughly chopped and toasted lightly
METHOD
Mix sugars and butter by hand. Add eggs. Add all the dry ingredients and mix together.Divide into even sized balls, use a kitchen scale if desired. Bake in preheated 180°c oven for about 12 minutes, depending more or less on size, until golden and set on the edges. They will crisp as they stand.
INFO & TIPS
Variations-
Almond Cookies:
Omit chocolate and pecans and replace with 100g-150g chopped almonds.
Nougat Cookies:
Omit chocolate and pecans and replace with chopped, FROZEN chunks of nougat. May add chopped macadamia nuts as well.
