Adapted from various recipes.
INGREDIENTS
250g butter, melted 1 and ½ cups brown sugar½ cup white sugar
2 eggs1 teaspoon vanilla essence
3 cups flour¼ cup ground oats (just pulse oats in processor or coffee grinder) 1 heaped teaspoon baking powder1 teaspoon baking soda½ teaspoon salt2x 80g slabs chocolate, chopped (I use wholenut Cadbury but Lindt would be delicious!) 2 generous handfuls pecans, roughly chopped and toasted
METHOD
Mix sugars and butter by hand. Add eggs and vanilla. Add all the dry ingredients and mix together.Divide into even sized balls, use a kitchen scale if desired. Bake in preheated 180°c oven for about 12 minutes, depending more or less on size.
