INGREDIENTS
500ml cake flour
20ml baking powder (4tsp)
3ml cinnamon
15ml poppyseeds
125ml soft brown sugar
15ml grated lemon rind
125ml oil
2 eggs
60ml milk
185ml yoghurt
Topping:
30ml brown sugar
5ml cinnamon
(mix topping ingred. together)
METHOD
Sift flour, cinnamon & baking powder together.
Stir in poppyseeds, rind & sugar. Beat oil, eggs,
yoghurt & milk together. Add to dry ingredients.
Stir to combine, dont over-mix.
Fill greased or lined muffin pan ¾ full.
Sprinkle topping over. Bake @ 200*C for 15-20
minutes.
