INGREDIENTS
2 eggs1 cup milk1 cup cake flour½ teaspoon salt
METHOD
Whisk the eggs and milk,add flour and salt and mix to form a smooth batter.
Pour into a jug. Allow to stand for half an hour
Place one tablespoon oil mixed with butter in a muffin tray.Place in oven until the fat becomes very hot.
Pour batter into hot fat ( half filling muffin cups)
Bake at 230 Celsius for 10 to 15 minutes until golden brown.
Serve with Roasted chicken or Roasted LambEnjoy!
INFO & TIPS
The oven door should not be opened as this will cause the the puddings to collapse
Serve immediately
I used Royco brown onion gravy (prepared according to package instructions) plus oil and butter,and then poured pudding mixture over it.
Traditionally this is prepared using the gravy from the roast chicken or lamb ( the hot fat)
