A Treasury of Indian Delights Recipe Book
INGREDIENTS
25 green mangoes (peel - and cut in halves )4 tablespoons coarse salt500g golden syryp4 tablespoons brown sugarΒΌ to β cup vinegar1 tablespoon crushed red chillies2 teaspoons turmericΒΌ teaspoon tartaric acid
METHOD
1. Choose large mangoes with pith beginning to harden. Wash, peel, and cut in halves. Mix with salt and turmeric and leave in enamel pot overnight.
2. Drain off moisture and spread on cloth over wire rack, dry in sun for 2 days. They should be very dry and dehydrated.
3. Boil sugar, vinegar, tartaric acid and golden syrup over very low heat and let syrup get very thick like melted toffee.
4. Add dried mangoes with rest of ingredients to syrup and boil rapidly for 15 to 20 minutes. Mangoes will release moisture, so keep on boil till mangoes get soft and syrup sticky and thick.
5. Turn out onto grease proof lined oven tray
Enjoy hot off the tray ... careful not to burn your fingertips π
