INGREDIENTS
113g ghee (Clarified butter) 240g Gram Flour 170g Icing sugar ⅓ teaspoon. Cardamom powder 3 to 4 Almond or cashew
METHOD
In a pan add a tablespoon ghee (Clarified butter) and place the pan over a medium heat once the ghee (Clarified butter) is melted and hot add in the chopped nuts and roast until the unts turns golden brown. Turn off the heat and remove the roasted nuts and set aside.To the same pan add in the base flour and roast until it turns a dark color, if you like you ladoo to be a light in color don't roast it until the color changes. I like the nutty flavor when it reaches this color.Now add in the remaining ghee (Clarified butter) and mix over a low heat until the ghee (Clarified butter) has coated all the basen flour.
Remove from the heat and transfer to a large bowl.
Mix with a wooden spoon, until it cools down and the ghee (Clarified butter) has realesed.
Once the mixture is warm to touch add in the roasted nuts, cardamom powder and the icing sugar, mix well once it's hard to mix with the wooden spoon
Use your hands and mix well until all the ingredients comes together.
Once you press the mixture in your hand and it holds its shape islts ready to be rolled into a ball.I am using a medium sized ice cream scoops for insurer that all the ladoos are the same size.
Scoop the ladoo mixture and roll into a ball. And place on a plate.
For decoration I am using gold leaves and chopped nuts.
