INGREDIENTS
1 whole chicken (skin on), cavity cleaned, washed and drained (I used a cut chocken )2 tablespoons Portuguese chicken spice3 tablespoons lemon juice3 teaspoons Aromat (a South African Spice)1 ½ tablespoons crushed garlic1 teaspoon ground ginger2 tablespoons olive oil1 tablespoon Worcestershire sauce½ teaspoon white pepper 2 teaspoons lemon pepper2 teaspoons hot chilli powder (optional)3 tablespoons mayonnaise2 tablespoons dried thyme (adjust according to taste)
METHOD
1. Mix all ingredients together to form a paste.2. Marinate the chicken ensuring that the inside of the cavity is also coated with the marinade.3. Allow to marinate for a minimum of four hours or preferably overnight.4. Place chicken in a pot with the marinade and add ¼ cup of water.5. Allow the chicken to steam for 20 minutes.6. Do not allow the marinade to dry out.7. Place the chicken into a roasting pan and pour the marinade over I8. Bake at 180° Celsius for a further 20 minutes.9. During the last 5 minutes of cooking, turn the oven onto grill and allow the chicken to grill until the skin turns golden brown and cris10. Serve with roasted potato wedges and the remaining
