INGREDIENTS
Rotis
β’ 5 cups flourβ’ 125g soft butterβ’ 5 tablespoon oilβ’ 1 & Β½ teaspoon salt
- Whizz in food processor till mixture resembles bread crumbs.- Empty out into large dish- Add in 2 & Β½ cups boiling water- Mix with a big spoon 1st till hot water is incorporated.- Then knead with your hands to form a nice soft dough.- Allow to rest for a few hrs.(Makes approx 15-18 normal size rotis)
Rotis For Roti triangles
- Divide dough into 30 balls (first into 15 & then half each one)- Roll out into small size rotis - Fry lightly on tawa till light freckles appear.(Do not fry for as long as you would usually fry normal rotis as then it breaks easily when filling)
Filling for Roti Triangles
Marshmallow Square Kebabs rcp (Pg 147 Indian Delights)
β’ 1.5 kg chicken fillet ( cubed )β’ Season with green Masala (ground green chillies) a teaspoon each of salt, crushed Jeeru (Cumin), crushed black pepper, ground garlic or according to taste β’ Lemon juiceβ’ 1 cup macaroni boiled & cut into small piecesβ’ Β½ cup chopped dhania (coriander)β’ 1 round or block of Feta (crumbled)β’ Β½ cup grated cheeseβ’ 2 tablespoon Mayo
White sauce
β’ 1 tablespoon butterβ’ 1 tablespoon flourβ’ 1 cup milk
METHOD
Filling
- Add the green Masala to the cubed fillet according to your taste & also add a good dash of lemon juice. Also add other seasonings according to your taste. Please use salt sparingly for the feta cheese which will be added later is salty. Cook till done. Add few butter blobs towards the end & break with the back of your spoon.- Add your grated cheese whilst the filling is still hot so it melts.- Boil macaroni drain & cool. Cut in 2cm lengths & add to your cooked chicken. Also add greens.- Add in the mayo.- Make white sauce by melting butter in a saucepan. Remove off the heat & stir in your flour. Add in milk a little at a time to avoid lumps. Add back to heat & whisk well... The white sauce must be thick & not runny. Add feta cheese & mix into the filling .
To assemble your roti triangles
- Cut each roti into equal halves - Form a pocket by folding over 2 sides towards the middle.- Fill a nice big tablespoon of your filling into the pocket.- Seal the flap & outer edges with flour paste.(Do not worry if you see it's opening up again. When you've completed the entire lot just repress each one to seal ; it should stick - even if it opens up slightly again it's fine - once frozen it fries well without the filling falling out)
- It is now freezer suitable.
Fry in slightly deep hot oil until light golden . Enjoy with chutneys of your choiceππ
