Pie Crust
β’ 2 & Β½ cups or 350g flourβ’ 1 tablespoon sugarβ’ 1 teaspoon saltβ’ +-1 cup butter (230g) cut into small chunks ( ice cold )
- Pulse the above ingredients for 15 seconds in a food processor- Add ice cold water ( +- ΒΌ to Β½ cup water) Start with a ΒΌ cup then add a tablespoon at a time till it clumps together- Empty out onto your work surface & gather up to form a dough.- Flatten to a circle- Wrap in cling wrap- Chill for an hour before rolling- Roll to fit a 9inch (23cm) pie plate ( roll 1 inch bigger all around )- Crimp edges and chill for Β½ an hour- This dough is enough for 2 pies ( Β½ the dough can be kept in the freezer for the next time )
Pecan Pie filling
This filling is enough for one pie crust
β’ 1 cup brown sugar ( 210g )β’ ΒΌ cup butterβ’ 1 teaspoon vanilla essenceβ’ β
cup (160ml ) Golden SyrupBring to boil on medium heatRemove & allow to cool before adding in the ffg :β’ 3 large eggs ( whisked)β’ β
cup fresh cream
- 1 & Β½ cups (200g) pecans, coarsely chopped & toasted- Put the pecans into the pie shell- Pour filling onto the pecans- Decorate with whole pecans- Bake +-45 to 50min at 180Β°c- Let it cool before serving
β Serve pecan pie slices warm with a scoop of ice cream or some whipped cream ππ»
