INGREDIENTS
4 cups flour2 tablespoons sugar2 teaspoon salt1 packet yeast1 ½- 1 ⅔ cups milk1 egg¼ cup oil, or half oil and half melted butter
METHOD
1. Whisk dry ingredients together.
2. Warm milk. Whisk in egg and oil.
3. With the mixer running on low, pour the liquids into the dry ingredients. Knead for 3-5 minutes on medium. Dough should be soft and tacky, but not overly sticky. It should come together nicely with oiled hands. Add more flour if needed, but add carefully!
4. Leave to rise for 1 hour. Shape into buns/rolls. Leave to rise again for 30-35 minutes. If you want a beautiful golden sheen on your buns/bread, brush with egg. Most of the time I don't bother.
5. Bake on 180°C until golden brown. Every oven is different, but with mine, I bake it 13-15 minutes for buns and about 20 minutes for bread loaves. Brush with melted butter when it comes out.

It's a very versatile dough. I use it for bread loaves, buns, rolls, burger buns, garlic knots...
The key(s) to a super soft and fluffy dough is 1) don't add too much flour. You don't want a tough dough. 2) Don't overbake.
