Bismillahi rehmani raheem
Step 1Ingredients:½packet carrots peeled and julienned2 punnet green beans cleaned cut2 baby cabbage chopped1 cauliflower cut into florets Robot peppers sliced 4 Green chillies thinly slicedMangoPrunes
Method:1.Take a pot add water, little salt and vinger in it let it boil then add the vegetables, let boil for 15 to 20 minutes until a bit soft.2. Drain well and pat dry.
Step 2Ingredients:6½ teaspoon salt1 tablespoon chillie powder4 tablespoon atchar Masala 2 tablespoon crushed red chillies1 heaped tablespoon dhania (coriander) powder1 teaspoon haldi
Method: 1. Mix all these spices together and throw over the veggies, mix nicely and let sit.
Step 3Ingredients:½ cup maizena (corn flour) 1½ cup vinegar 1 cup sugar
Method:1. Boil the above nicely, stirring continuously and once thickens pour over bowl of veggies.2. Mix nicely until all properly mixed.
(If this mixture gets a bit hard, switch stove off add little vinegar and 1 tablespoon oil, using a hand whisk mix nicely and then pour mixture over the veggies.)
Step 4 VagaarIngredients:1½ cup oil 8 green chillies chopped 10 cloves garlic2 tablespoon mustard seeds 2 bunches curry leaves
Method:1. Heat oil in a wok, add the above ingredients and fry nicely also until u get a good smell of the curry leaves.2. Once done throw hot hot onto the veggies and mix nicely.
Step 5Ingredients: 250ml mayonnaise 1 small bottle smooth apricot jam.
Method.1. Mix jam nicely until soft. Throw over the atchar and mix nicely.2. Add your mayonnaise and mix properly until well incorporated.3. Bottle once cool.
Enjoy!Tastes very nice, same like the wedding vegetable atchar!
