🍋 Lemon & Ginger Pepper Chicken

RECIPE
You’ll Need:
1 kg chicken fillet (I used thigh pieces)
2 teaspoon black pepper
2 teaspoon cumin powder
2 teaspoon garlic powder
2 teaspoon salt
Juice of 1 lemon
1 tablespoon crushed garlic
2 cups yoghurt (I used inkomazi for extra tang)
1 cup cream
For Cooking:
½ cup oil (original recipe uses 1 cup – I reduced it here because I found it to be too oily)
4 tablespoon butter
8 dried red chillies
1½ teaspoon cumin seeds
For Garnish:
Extra black pepper
Lemon pepper
Chopped parsley
Chopped green chillies
Fresh coriander
Julienned ginger
Lemon slices

How to Make:
1. Marinate chicken with black pepper, cumin, garlic powder, salt, lemon juice, crushed garlic, yoghurt, and cream.
2. Heat oil and butter in a pan. Add dried red chillies and cumin seeds, sauté until fragrant.
3. Add chicken pieces (reserve marinade!) and cook for 20 minutes until tender.
4. Mix leftover marinade with cornflour and water, then pour into the pan. Simmer 5–8 minutes until slightly thickened.
5. Finish with lemon slices, pepper, parsley, lemon pepper, green chillies, coriander, and ginger.
Rich, creamy, zesty, and peppery – this dish is perfect with naan or rice. 🌿🍋
