500g packet of penne pasta
Pasta sauce (or I make my own)
1 -2 cubed chicken
SpinachCream cheese Pouring Cream
METHOD
1. Boil penne pasta in salt and olive oil (Always reserve ½ cup of the pasta water)
2. Toss in a big sachet of @woolworths_sa tomato & basil pasta sauce, ½ cup pasta water, 2 spoons of mascarpone/cream (optional), table chilli/ground red chilli, a sprinkling of Parmesan cheese, a few scrunches @woolworths_sa Italian grind and a pinch of sugar. You can adjust the flavour and heat to your liking.
Place the pasta at the bottom of a casserole dish.
Chicken - cook fillets with olive oil, salt, white pepper, Cajun spice, bbq spice, garlic and lemon juice - brown in the pan for extra flavour and top the pasta with the chicken.
Creamed spinach (you can use your own recipe or a ready made one too)
Fry half an onion in butter, add ½ teaspoon garlic & then add in one large bag of baby spinach, I chop it up a little. Add salt, white pepper and a dash of Aromat (a South African Spice). Cook till the water has dried up. Then add in 1,5 cups of thick cream ½ cup of milk, 2 tablespoon cream cheese or mascarpone.
INFO & TIPS
The Recipe is very forgiving so you can play around but the idea is simple...make an arrabiata pasta at the bottom, add some Cajun chicken and creamed spinach on top and baked with mozzarella! If I have on hand, I often add sautéed mushrooms to the spinach for extra yum as well!
