From dough to delicious — the puff says it all! 🫓

Ingredients:
6 cups flour
3 cups tap water
A drizzle of oil (for coating and storing dough)
💡 Ratio tip:The perfect ratio is always 2:1 — that’s 2 cups flour to 1 cup water.

Method:1️⃣ Add the flour and water to a stand mixer.Mix until a dough forms.
2️⃣ Once the dough comes together, drizzle in a little oil and knead for about 20 seconds.The dough should be slightly stiff, slightly soft, and elastic.(I use Supreme flour for my rotis.)
3️⃣ Place the dough in a container, drizzle the top with a little oil, close it, and refrigerate.The dough keeps well for 4–5 days in the fridge.I usually make a fresh batch every 2nd / 3rd day.

To cook the rotis:1️⃣ Roll out the rotis.
2️⃣ Heat a tawa and place the roti on it.Cook lightly on one side, then flip.(You just want light freckles, the roti should look like when u making pur)
3️⃣ Flip again once the other side has a few light spots.When it starts puffing slightly, remove the tawa and place the roti directly over the flame. 🔥
4️⃣ Use tongs to turn and puff evenly.
5️⃣ Stack the rotis on a clean cloth and fold them in to keep warm and soft.

🌿 Note:These rotis are best enjoyed fresh on the same day — they don’t stay soft overnight.
