Balochi Sajji Chicken

Step 1: Prep the Chicken
In a pot, add:
1 whole chicken (skin on)
1 tablespoon salt
Juice of 1 lemon
3 tablespoon oil
Enough water to cover the chicken
Mix everything well and soak the chicken for 2 hours.

Step 2: Make the Marinade
In a bowl, mix together:
½ teaspoon salt
¼ cup oil
2 tablespoon ginger-garlic paste
2 tablespoon red chilli powder
2 teaspoon coriander powder
½ teaspoon turmeric
Set aside.

Step 3: Marinate
Drain the chicken (do not rinse).
Poke the chicken all over using a fork or knife.
Apply the prepared marinade generously.
Leave to marinate for 1 hour.

Step 4: Cook the Chicken
Airfryer Method:
Place chicken pieces skin side down.
Airfry 15 minutes at 180°C, flip over, then airfry 20 minutes more.
Heat a piece of charcoal until red hot and smoke the chicken for 10 minutes.
Stovetop Method:
Fry chicken in a pan until browned on all sides.
Cover and steam on low heat until fully cooked.

Sajji Rice
In a pot, heat oil and sauté 1 teaspoon garlic.Add:
1 teaspoon cumin seeds
10 peppercorns
3 cloves
2 cinnamon sticks
¼ teaspoon cardamom powder
1 teaspoon garam masala
1 teaspoon chaat masala
Mix well, then stir in:
½ cup yoghurt
½ cup milk
5 cups water
1 chicken stock cube
Salt to taste
Add 3 cups rice and cook until almost done.Drizzle a little yellow food colouring on top and steam until fully cooked.

Sajji Spice Blend
Mix together:
1 tablespoon chilli flakes
½ teaspoon dried fenugreek leaves
½ teaspoon garam masala
½ teaspoon chaat masala
½ teaspoon black pepper
½ teaspoon mango powder
½ teaspoon salt
½ teaspoon roasted cumin powder
½ tablespoon roasted coriander powder
Set aside.

To Assemble
1. Spread the Sajji rice on a large platter.
2. Arrange the cooked chicken on top.
3. Squeeze fresh lemon juice.
4. Sprinkle the spice blend generously.
