Assorted Butter Biscuits 🍪

Ingredients
• 250 g butter, softened• 1 cup icing sugar• ½ cup oil• ¾ cup cornflour• 1 teaspoon vanilla essence• ± 3 cups flour (as needed to form a soft dough)
Method
Beat the butter and icing sugar until light and creamy.Add the cornflour and mix well.Pour in the oil and vanilla essence, mix until combined.Gradually add flour and bring together to form a soft, pliable dough.Divide the dough into 3 portions.
Shaping ideas
✨ Matchsticks• Roll dough into long sticks.• Bake, then dip the ends in melted chocolate once cooled.
✨ Diamond biscuits• Cut using a diamond cutter.• Brush with egg wash and sprinkle crushed pheni on top.
✨ Flower biscuits• Cut flower shapes.• Brush tops with egg wash and place an almond in the centre.• Bake, then dip half the biscuit in melted chocolate.• Once set, dust the other half with icing sugar.
Baking• Bake at 160°C Thermofan or 180°C conventional oven• Bake until lightly golden (do not overbake).
