INGREDIENTS

(Serves 12)
125 g plain biscuits, crushed
60 g unsalted butter, melted
3 teaspoon halaal gelatine
3 tablespoon hot water
250 g light cream cheese, softened
1 can Caramel Sweetened Condensed
Milk, 380g (2 tablespoon set aside for
topping)
300 mL cream
How to make
1. Combine biscuit crumbs and butter,
press into base of 23cm flan pan,
refrigerate until firm.
2. Dissolve gelatine in hot water,
cool.
3. Using an electric beater; beat
cream cheese until smooth. Add ¾ of
theCaramel Sweetened Condensed Milk,
add cream, beat until smooth. Beat
gelatine into cheesecake mixture.
4. Spoon mixture evenly over crumb
crust. Whisk remaining caramel to a
smooth consistency and spoon over
cheesecake, swirl through. Refrigerate
until set. Serve with toffee shards if
desired.

30 minutes plus chilling time
