INGREDIENTS
For the cake:
4 large eggs375ml sugar125ml oil125ml hot water375ml cake flour4 tablespoons cocoa3 teaspoon baking powder
Chocolate mousse For topping:
250ml cream300g dark chocolate2tblsps sugar2tblsps butter
METHOD
Sift all dry ingredients together in a bowl. Preheat oven to 180 degrees celsius.
In another bowl, beat eggs and sugar till very pale and thick.Fold in dry ingredients slowly while adding liquid, do not beat too much, just enough for the mixture to be smooth.Grease two round cake tins and pour mixture equally into the tins.Bake for about 25 minutes or until a skewer inserted comes out clean.Allow cake to cool completely.
Use chocolate mousse (recipe found in desserts tab) to sandwich cake together keeping some aside to decorate the top of the cake.
For the topping:
Heat cream, butter and sugar in a saucepan on stove.Do not allow mixture to boil.Once the butter has melted and the sugar has dissolved, break chocolate into pieces and add to hot mixture.Stir until all the chocolate has melted.Allow ganache to cool down completely and thicken.
Spread ganache over the whole cake including the sides.Top with leftover mousse and decorate with shavings of chocolate, strawberries or whatever takes your fancy!
