500 ml cake flour
10 ml instant yeast
5 ml sugar
3 ml salt
20 ml olive oil
180 ml warm water
500 g Grated mozzarella cheese
Chutney or sause of choice
1 kg chicken fillet cubed and cooked in any moist receipe of choice:
2 teaspoon ginger garlic
1 teaspoon chicken spice
1 teaspoon Aromat (a South African Spice)
1 teaspoon lemon pepper
1 teaspoon bbq spice
2 teaspoon dhana jeeroo
red chillies to taste
1 teaspoon garlic flakes
½ teaspoon arad (Turmeric)
1 tablespoon mayo
1 tablespoon tomato sauce
Place dry ingredients in bowl. Add olive oil to water and stir in with wooden spoo . Mix to soft dough.
On lightly floured surface knead for 5 minutues. Dough must be smooth and elastic to touch.
place in oiled plastic and leave to rise for 30-45 minutues till double in size.
turn out on to floured surface amd knead to knock out air bubbles. Divide into 2.
Roll into two large circles. Spread full circles with chutney or sauce of choice, then cooked chicken fillet cubes and cheese.
roll up as a swissroll and slice into approx 1 cm slices.
Place on greased baking pan. Sprinkle with dried mixed herbs and bake till golden approx 10min in a preheated oven at 200°c.
can now be frozen.
serve hot with chutney of choice.
