INGREDIENTS
Dough:
500 ml cake flour10 ml instant yeast5 ml sugar3 ml salt20 ml olive oil180 ml warm water
Filling:
500 g Grated mozzarella cheeseChutney or sauce of choice
1 kg chicken fillet cubed and cooked in any moist recipe of choice:2 teaspoon ginger garlic1 teaspoon chicken spice1 teaspoon Aromat (a South African Spice)1 teaspoon lemon pepper1 teaspoon bbq spice2 teaspoon dhana jeeroored chillies to taste1 teaspoon garlic flakes½ teaspoon arad (Turmeric)1 tablespoon mayo1 tablespoon tomato sauce
METHOD
Dough:Place dry ingredients in bowl. Add olive oil to water and stir in with wooden spoon. Mix to soft dough.On lightly floured surface knead for 5 minutes. Dough must be smooth and elastic to touch.Place in oiled plastic and leave to rise for 30-45 minutes till double in size.Turn out on to floured surface and knead to knock out air bubbles. Divide into 2.
Roll into two large circles. Spread full circles with chutney or sauce of choice, then cooked chicken fillet cubes and cheese.Roll up as a swissroll and slice into approx 1 cm slices. Place on greased baking pan. Sprinkle with dried mixed herbs and bake till golden approx 10 minutes in a preheated oven at 200°c.Can now be frozen.
Serve hot with chutney of choice.
